Ingredients:

4 to 5 chicken thighs, washed
Extra virgin olive oil
2 tbsp. herbs de providence
6 to 8 whole black peppercorns
Kosher salt

Directions:

Heat oven to 450 °F. In a glass casserole dish, lay washed chicken thighs skin side up. Brush liberally with olive oil and sprinkle on kosher salt to taste. In a mortar and pestle, grind up herbs and peppercorns until fine. Sprinkle herbs and pepper mixture on chicken. Bake until thermometer reads 165°F when inserted into the meatiest part of the chicken or approx. 45-60 minutes.

The best part of this dish is the skin, which is crispy and flavorful. For a healthier dish, remove the skin and just add salt and herbs to meat. Any kind of herb mixture can be used in place of the herbs de providence, which is usually a combination of thyme, marjoram, rosemary, basil, fennel, sage, and lavender.
