Ingredients:

2-1/2 cups whole wheat pastry flour
2-1/2 tsp. baking powder
1 tsp. ground cinnamon
1 cup diced apples
1/2 cup sunflower seeds
3/4 cup buttermilk
2 eggs, beaten
1/4 cup honey

Directions:

Preheat oven to 375 F. Lightly butter 12 (2 3/4-inch) muffin cups.

Combine flour, baking powder and cinnamon in a large bowl.

In a medium size bowl, combine apples, sunflower seeds, buttermilk, eggs and honey.

Stir apple mixture into the dry ingredients just until combined.

Divide batter among muffin cups. Bake 25 to 30 minutes or until golden brown. Makes 1 dozen.

Whole Wheat Pastry flour can be bought at the health food stores. This flour makes the muffins tender.
