Ingredients:

3-1/2 cups sifted all purpose flour
1/2 tsp. salt
1/2 cup cooking oil
3 cups light beer
2 eggs
2 tbsp. grated lemon rind
1 tsp. fresh lemon juice
1/2 tsp. vanilla extract

Directions:

Combine all ingredients in a deep bowl. Beat until smooth. Let stand at room temperature for 2 hours to rise slightly. Or, if for breakfast, store unrisen in refrigerator overnight and use without further rising. Spread batter on waffle iron; use only a small quantity to insure crispness. Watch while baking; waffes brown quickly. The beer acts as a leavening and leaves no trace whatsoever in these light crisp waffles. Good with sour cream and brown sugar. Makes 14 to 16 waffles.
