1 cup almonds, blanched and peeled
1 tsp. egg white
3-1/4 cups superfine sugar
7 eggs
8 tbsp. butter, melted
1/4 tsp. almond extract
1 tsp. ground cinnamon
2 sugar tablets, rubbed over the rind of lemon, then coarsely crushed (or 1 tsp. granulated sugar)
1/4 cup finely chopped candied orange peel
4 cups flour

Directions:

Combine the almonds and spoonful of egg white in a mortar and pound the nuts to a fine paste. In a bowl, mix the paste with the superfine sugar and whole eggs, and whisk until the mixture is thick and foamy. Stir in the butter, almond extract, cinnamon, crushed lemon flavored sugar, candied peel and flour.
Drop this batter by tablespoonfuls onto buttered baking sheets—spacing the mound well apart.
Bake in a preheated 350 F. oven for 15 minutes, or until the cookies are browned. Remove the cookies from the baking sheets as soon as they come out of the oven.
To make 80 to 90 cookies.
NOTE: If you can’t find superfine sugar, or fruit sugar, blend granulated sugar in the blender until it becomes superfine.
