Ukrainian Herring with Sour Cream Sauce (Zakusky z oseledtsia)

Ingredients:

2 salt herring fillets (schmaltz or matjes)
1 cup milk
1 sm. red onion, cut into thin rings
1/2 cup sour cream
3 tbsp. heavy cream or whipping cream
1 tbsp. white vinegar
1/2 tsp. sugar
2 tbsp. chopped fresh dill for garnish

Directions:

Soak the herring in milk, covered, in the refrigerator for 4 or more hours. If you wish you can skin the herring and remove bones.

Rinse then pat dry with paper towels, and cut into 1 inch pieces. Place, along with the onion rings, in a glass or plastic jar with a lid.

In a small bowl, whisk together sour cream, heavy cream, vinegar, and sugar. Combine with the herring and onion rings. Cover and refrigerate for several hours.

Arrange in a serving dish and serve sprinkled with dill. Serves 8.

An old world herring dish. If you prefer your herring less salty, use matjes fillets instead of schmaltz.
