Ingredients:

1 cup honey
1/2 cup butter
1 cup brown sugar
6 eggs, separated
2-1/2 cups sifted cake flour (NOT self rising flour)
2 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
1/2 cup milk

Directions:

Bring the honey to a boil and then cool it. Cream the butter with the sugar until light. Add the egg yolks, one at a time, and beat until fluffy. Beat in the honey.

Sift the flour with the dry ingredients twice. Add the flour to the mixture alternately with the milk.

Beat the egg whites until stiff and fold gently into the batter.

Spoon into a buttered cake pan. Bake in a moderate oven (350 degrees F.) for about 45 minutes, or until done when tested.

Comments from olga :

A light and tender medivnyk. Use buckwheat honey for a richer flavor.
