Ingredients:


Sour Cream Sauce:
2 hard-cooked eggs
1 cup dairy sour cream
1 tsp. prepared mustard or dill
1/4 tsp. sugar
1/4 tsp. salt
1/8 tsp. pepper

Mushroom Sauce:
1 lb. mushrooms, sliced
1 lg. onion, chopped
1 cup chicken or meat broth or bouillon
3 tbsp. flour
2 tbsp. melted butter
1/2 cup dairy sour cream
1 tsp. lemon juice
Salt and pepper

Green Onion Sauce:
1 cup dairy sour cream
3 tbsp. sliced green onion
1 egg yolk, beaten
2 tbsp. prepared mustard
1 tsp. lemon juice
1/4 tsp. sugar
1/4 tsp. salt

Cold Horseradish Sauce:
6 oz. prepared cream-style horseradish
1 lg. apple, pared and shredded
1-1/2 cups dairy sour cream
1/2 tsp. sugar
1/4 tsp. salt

Directions:

SOUR CREAM SAUCE:

1. Press eggs through a sieve. Add sour cream and beat with a mixer
at medium speed 3 minutes. Add mustard, sugar, salt, and pepper.
Beat 1 minute at high speed.

2. Serve with ham or veal.

MUSHROOM SAUCE:

1. Simmer mushrooms with onion in bouillon 15 minutes.

2. Blend flour into butter. Stir into mushrooms. Bring to boiling, stirring.

3. Remove from heat. Stir in sour cream, lemon juice, and salt and pepper to taste.


GREEN ONION SAUCE:

1. Combine sour cream, green onion, egg yolk, prepared mustard, lemon juice, sugar, and salt.

2. Serve hot or cold.

COLD HORSERADISH SAUCE:

1. Mix horseradish with apple. Add sour cream; stir in sugar and salt.

2. Serve with cold meat, hard-cooked eggs, and fish.
