Spiced Brew:
2 pints vodka
2 cups sugar
1 tbsp. ground cloves
1 tsp. ground nutmeg
1 tsp. cinnamon
1 tsp. saffron
1/4 tsp. vanilla

Medivka (Honey Liqueur):
1-1/4 cups water
Zest of 1 orange or lemon
3 whole cloves
1 tsp. allspice
1/4 tsp. nutmeg
1 cup dark honey
2-1/2 to 3 cups vodka

Cherry Vodka:
4-1/2 cups vodka
zest of two oranges
10 whole cloves
1-1/4 cups cherry syrup

Hot Punch:
4-1/2 cups red table wine
1/2 cup dark rum
1-1/2 cups sugar
1 cinnamon stick
12 whole cloves

New Year's Apple Punch:
1 orange
1 lemon
1 cup sugar
1 cup vodka
1 qt. apple juice

Krupnyk Vodka Punch:
1/3 cup water
2 to 3 peppercorns
zest of one lemon
1 whole cinnamon stick
2 tbsp. dark honey
2 tbsp. sugar
1/2 cup water
2 cups vodka

Cherry Whiskey:
4 lb. ripe cherries
2 lb. sugar
1 tsp. cinnamon
1 tsp. ground nutmeg
2 cups sugar syrup (with equal portions of water and sugar)
2 cups whiskey

Homemade Chokecherry Wine:
1 gallon choke cherries
1 orange, sliced
1 lemon, sliced
2 gallons water
1 pkg. dry yeast
1 gallon sugar

Lemon Liqueur (Cytrynivka):
10 lemons
6 to 10 coriander seeds, crushed
6 to 10 whole cloves
6 cups vodka
6 cups sugar
6 cups water

Hot Spiced Vodka (Varenukha):
3 tbsp. honey
2-1/10 pints vodka (4 cups)
3 oz. dried pears
3 oz. dried apples
3 oz. dried prunes
1 piece (1 inch) cinnamon stick
1 piece (1/2 inch) fresh ginger
4 white peppercorns

Directions:

FOR THE SPICED BREW: Warm the vodka in a saucepan to dissolve the sugar; add the spices and vanilla. Pour mixture into a glass gallon jar. Cover with several layers of cheesecloth tied tightly with string. Let stand in a cool, dark place for 2 weeks. Filter through a clean cloth, paper, or coffee filter and pour into a cleaned and sterilized jar. Seal and cool. Makes one quart.

FOR THE MEDIVKA HONEY LIQUEUR: Place the water, orange or lemon zest, cloves, allspice, and nutmeg in a small saucepan. Cover and simmer for 10 to 15 minutes. Strain the water through a clean cotton cloth into another pot and add the honey. Bring to a simmer and skim the foam from the surface. Gently warm the vodka, add the honey mixture, and combine well. Cool, pour into sterile jars and seal. Makes about 5 1/2 cups.

FOR THE CHERRY VODKA: Pour vodka into an enamel bowl; metal reacts negatively with the vodka. Add orange zest and cloves. Cover bowl and keep at room temperature for two weeks. Strain vodka mixture through a clean cotton cloth or coffee filter, add the cherry syrup, and stir well. Store in sealed jars. Keeps for up to six months. Makes about 6 cups.


FOR THE HOT PUNCH: Place wine, rum, sugar, cinnamon stick, and cloves in an enamel pot. Simmer gently until sugar dissolves. Strain and pour into glasses. Serves six.

FOR THE NEW YEAR'S APPLE PUNCH: Cut the orange and lemon into thin slices (do not peel) and sprinkle with sugar; refrigerate overnight. The next morning add the vodka and let stand at room temperature. In the afternoon add the apple juice. Stir well and chill until serving time. Makes 8 servings.

FOR THE KRUPNYK VODKA PUNCH: Boil 1/3 cup of water in a pot; add peppercorns, lemon zest, and cinnamon. Simmer for 10 minutes then strain and reserve the liquid. Add the honey and sugar to 1/2 cup of water and bring to a boil. Remove the foam. Combine reserved liquid and honey mixture and add to vodka. Heat on low then pour into punch cups. Serve immediately. Serves six.

FOR THE CHERRY WHISKEY: Clean cherries and place in a sterilized crock. Add sugar, cinnamon, and nutmeg, stirring thoroughly. Cover with a cheesecloth and let stand in a warm place for 2 weeks. Strain liquid through a clean cloth into a large glass jar and add syrup and whiskey. Pour into sterilized bottles, cork and store in a cool dark place. Allow to ferment 5 to 6 weeks before sampling.


FOR THE HOMEMADE CHOKECHERRY WINE: Clean cherries thoroughly and grind them in a food grinder. It is not necessary to remove stones. Add the orange and lemon slices. Mix together fruit, water, and yeast. Cover and set aside in a warm spot for 3 to 6 days.

Strain the liquid through a clean cotton cloth and add one gallon of sugar for every gallon of cherry liquid. Bottle and seal mixture. This type of wine can also be made from beets or other fruits and vegetables.

FOR THE CYTRYNIVKA LEMON LIQUEUR: Cut up lemons with peel and place in a large glass jar. Add coriander seeds and cloves, pour vodka over and let stand at room temperature for one week. Make a thick syrup of the sugar and water by heating over a low flame. Cool slightly and set aside. Pour vodka mixture through a sieve into the syrup and stir well. when cool, sample and adjust vodka amount to taste. filter through a cheesecloth and transfer to jars. Seal and let stand 2 weeks. Yields 3 to 4 quarts.

FOR THE HOT SPICED VODKA: In an nonreactive saucepan, combine the vodka and honey and bring to a boil over medium-low heat, stirring to dissolve the honey.

Preheat the oven to 125 degrees F.

Select an oven proof pot with a very tight-fitting lid. Pour the vodka in it and add the dried fruit and the spices. Bake for about 5 hours.

Strain thoroughly and transfer to a bottle. Serve slightly warm. Makes 1 quart.

For centuries varenukha" --which means "boiled"--was the favored tipple of the fearsome Cossacks, fueling their warrior bodies by day and making them merry by night. It should be served warm.

There are three rules to drinking vodka straight.

1. Never drink alone. To sit by yourself is seen as unnatural and anti-social. Even drunkards will band together in small groups.

2. Never drink without eating something immediately afterwards.

3. Never sip your vodka, or add ice or tonic.

Make sure you get Ukrainian Horilka such as--Old Kyiv Vodka, Hetman Vodka, Perlova
