Ingredients:

1 tbsp. butter
2 tbsp. sugar
1/4 tsp. salt
3 eggs, separated
1/4 cup all purpose flour
1/4 cup milk
1/4 cup water
1 tsp. brandy or 1/2 tsp. vanilla

Directions:

Cream the butter with the sugar and salt. Beat the egg whites until stiff and set aside. Beat the egg yolk until light, and the sugar butter mixture, and beat until smooth. Stir in the remaining ingredients and beat thoroughly. FOLD in the beaten egg whites.

Heat a frying pan and butter it lightly. Pour a few tablespoons of the batter and cook over a moderately low heat, without tipping the pan or spreading the batter. When lightly browned on the bottom, turn it over and brown the other side. Handle the cake gently. Remove it to a warm serving dish and place it in a heated oven while baking the next one. Arrange the cakes in layers, spreading some crushed, sugared fruit between them.

Honey Filling may take the place of fruit. Look under UKRAINIAN ELEGANT NALYSNYKY for the recipe.
