Ukrainian Elegant Nalysnyky (Filled Crepes with Variations)

Ingredients:

3 eggs
3 tbsp. flour
3 tbsp. water
3 tbsp. milk
1/4 tsp. salt

Cottage Cheese Filling:
2 cups dry cottage cheese
2 egg yolks
1/4 cup or more sugar
1/2 tsp. vanilla
1/4 tsp. cinnamon
Few grains salt

Honey Filling:
3 tbsp. butter
1/2 cup honey
1/2 tsp. grated lemon or orange rind
1 tsp. lemon juice
1 tsp. orange juice
1/2 cup walnuts or pecans, crushed

Orange Sauce:
3 tbsp. butter
1/2 cup confectioners’ sugar
1/3 cup orange juice
1 tbsp. lemon juice
1/2 tsp. grated orange rind
1 tbsp. sherry, if desired

Directions:

FOR THE ORANGE SAUCE: Mix all the ingredients until smooth and creamy.

FOR THE COTTAGE CHEESE FILLING: Mash the cottage cheese, or press it through a sieve. Combine with the remaining ingredients; mix thoroughly.

FOR THE HONEY FILLING:

Cream the butter with the honey; stir in the remaining ingredients

CRUSHED FRUIT FILLING:

Fill nalysnyky with crushed, sweetened strawberries, raspberries, blueberries, pitted cherries, or other fruit.

FOR THE NALYSNYKY: Beat the eggs well and combine with the remaining ingredients. Beat until the batter is smooth and creamy. Use a small frying pan about 6 inches in diameter. Butter lightly and heat well. Pour a few Tablespoons of the batter to cover the bottom of the pan with a very thin coating. Tilt the pan back and forth to spread the batter evenly. When lightly browned on the bottom and firm to the touch on top, remove the cake to a warm plate and keep it warm. To assure tenderness, the cake should not be turned over. Howerver, it may be turned, if desired. Continue baking in this manner until all of the batter is used. Butter the pan lightly each time.

Spread the cakes with a favorite sweet filling. Then roll or fold in two. Dot generously with butter, or sprinkle browned buttered crumbs over them. Heat in a moderate oven for a few minutes. Serve hot. An excellent accompaniment for these cakes is the Orange Sauce. Serve hot.
