Ukrainian Egg Noodles With Cabbage (Lokshyna)

Egg Noodles:
1 cup flour
3 lg. eggs
1 tbsp. water
1 tsp. salt

Cabbage:
2 cups shredded cabbage
1 onion
1/2 cup butter or 1/4 cup oil
1/2 cup sauerkraut (optional)
1 tsp. salt
1/2 turn fresh ground black pepper
3 tbsp. dry bread crumbs
1 tbsp. butter

Directions:

FOR THE EGG NOODLES: Add eggs, water, and salt to flour until a ball forms. Knead until smooth (about 10 minutes). Or, in processor, add eggs, water, and salt to dough and mix until dough forms. (Add a little more water if dough is very stiff.) Allow to rest a moment or two. Then knead again several times and allow to rest again.

On a floured work surface, roll out dough into a very thin sheet. Gently loosen dough from surface from time to time with a floured hand. Flip over and roll again several times. Place on a cloth to dry. Turn and allow other side to air dry, about 10 to 15 minutes.

On work surface, roll into a lose roll and with a very sharp knife cut into strips of desired thickness. Spread noodles on cloth and allow to dry, 5 to 10 minutes. Toss a bit, so they do not stick together. Drop noodles into a large pot of rapidly boiling water and mix lightly. Cook, uncovered, until done, about 4 minutes. do not overcook. Drain and rinse with cold water.

FOR THE CABBAGE: In a large heavy skillet, saute shredded cabbage and chopped onion in 1/2 cup melted butter until cooked lightly. Add sauerkraut for a robust flavor. Season with salt and pepper. Toss drained noodles into cabbage mixture and heat through.

Serve sprinkled with bread crumbs browned in 1 tablespoon butter.

OTHER USES FOR LOKSHYNA:

BROAD OR SQUARE LOKSHNA:

Follow the preceding recipe for Lokshyna. Cut the dough into broad shreds or tiny squares. These may be used in various lokshyna dishes.

LOKSHYNA WITH COTTAGE CHEESE:

Here is a nutritious dish which is very simple to make. Prepare a desired amount of lokshyna. Cook as directed. Drain, but do not rinse the lokshyna with cold water. Add some melted butter or bacon fat and mix lightly. Mix in some fresh cottage cheese and season to taste with salt. Top with chopped crisp bacon or salt pork. Keep it hot until ready to serve.

LOKSHYNA WITH EGGS:

Follow the preceding recipe, but instead of the cheese use lightly beaten eggs. To 1 cup of cooked lokshyna allow about 1 tablespoon of butter and 1 egg. Melt the butter in a frying pan and add the cooked lokshyna mixed with the eggs and seasoned with salt. Cook and stir as for scrambled eggs. Serve immediately.

FRIED COOKED LOKSHYNA:

Cook the egg noodles, drain, rinse with cold water, and drain again. Spread them in a thin layer on a platter and chill thoroughly in the refrigerator. Separate the strands. Fry a small quantity at a time in deep fat (380 to 390 degrees F) until the noodles are a delicate brown color. Remove and drain on absorbent paper. Sprinkle the noodles with salt and keep them warm. Serve as an accompaniment to meat, or use as a topping for creamed dishes.

FRIED LOKSHYNA:

Noodles prepared by the following method will be regarded as a rare treat by the family and guests. They are good as an accompaniment to meat, as a topping for various dishes, and as a snack.

Prepare the noodle dough, but do not dry it. Cut the rolled dough into 3 inch strips. Shred each strip individually and toss the shreds lightly to separate the strands. Fry a small quantity at a time in deep fat (380 to 390 degrees F.) until the noodles are a delicate brown color. Drain on absorbent paper. Serve as desired.

Nothing equals the taste of fresh homemade noodles. Making them is not as much work as it usually thought; the food processor kneads the dough in minutes. Fresh noodles are available at some specialty markets, and commercial noodles may be substitutes in a pinch. The cabbage flavoring is delicate and weds well with the dough taste.

Lokshyna Home-made noodles are not only delicious but very easy to prepare. They may be made in a large quantity, dried, and stored in a covered container for future need. For a busy homemaker it is convenient and time saving to have a supply of home-made noodles on hand for any emergency. Increase this recipe to suit your need.
