Ingredients: |

6 to 8 red potatoes, or the equal amount of small red potatoes
1 med onion, cut in half and in thin slices
1 tbsp. oil
2 tbsp. butter or margarine
2 cloves garlic, minced
1/2 tsp. basil

Directions:

Boil potatoes till tender. After boiling potatoes chill them in iced water for a few minutes. In a bowl, mix all ingredients together except butter.
Lay out some foil shaped as a rectangle with sides up about 1/2 inch (I use tupperware as a mold), wipe the foil with oil to prevent sticking and layer some of the mix down and top with parts of butter. Lay down a second layer and top with parts of butter. Finish with a third later and butter. Wrap tightly with foil. Cook on grill over medium heat for about 12-15 minutes each side.

This is a side dish that you can just have fun with. You can add bacon, cheese, any other spice or anything that you feel tasteful.
