1 lb. baking potatoes (peeled n' cubed)
2 cups 2% low fat milk
2 tsp. reduced calorie margarine
1/2 tsp. salt
1/4 tsp. fresh ground black/white pepper
Optional
1/4 cup green onions (sliced)
1/4 cup cooked bacon crushed into bits
1/2 cup shredded cheddar cheese

Directions:

In a medium saucepan boil water then add potatoes and cook for 15 minutes, until tender. Add milk, margarine, salt and pepper. Stir well, while cooking over medium heat until thoroughly heated, Keep stirring frequently. Serve in your favorite soup bowl or cup and top with green onions, bacon bits or shredded cheese.
