Ingredients: |
|
|
1 cup strong black coffee
1 cup Worcestershire sauce
1 cup ketchup
1/2 cup cider vinegar
1/2 cup brown sugar
3 tbsp. chili powder
2 tsp. salt
2 cups chopped onion
6 cloves garlic, minced
5 lb. beef short ribs or pork ribs
|
Directions:
|
In a large saucepan, combine coffee, Worcestershire sauce, ketchup, vinegar, sugar, chili powder, salt, onion, and garlic. Simmer for 25 minutes. Transfer mixture to a blender or food processor and puree. You will have about 5 cups of sauce.
Place ribs in a large flat pan. Pour 3 cups of the sauce over the ribs, turning ribs to coat with sauce. Pierce meat with a large fork. Marinate for 8 hours, turning once.
Remove ribs from marinade and brush off excess liquid. Bake ribs in a 350°F oven for 1 hour and 30 minutes.
Heat remaining 2 cups of sauce and serve on the side.
Marinade can be stored in the refrigerator. Serves 6.
