Ingredients:

4 lg. eggs, beaten
Fresh spinach, washed and destemmed
Mushrooms, sliced
Yellow onion, diced
Evaporated milk
Shredded colby and Monterrey Jack cheese
Sour cream
Sea salt and pepper, to taste

Directions:

Saute mushrooms and onions until done. Add spinach to cook down, about 5 minutes, and set aside. Beat eggs with evaporated milk. Place in pan and cook eggs until bottom is done. Add all veggies and top with cheese, the flip one side of the eggs to cover the fillings. Cook about 3 minutes. Move to a plate topped with cheese and let the cheese melt. Divide into servings and top with sour cream.
