Ingredients:

9 cups water
6 cups brown sugar
3 cups vinegar
3 tbsp. coarse salt
2 tbsp. allspice tied in a cheesecloth
2 qt. red peppers (about)

Directions:

Cook all above to a boil.

Clean and slice about 2 quarts more or less of nice fat red peppers. Put them in the syrup for a few minutes to soften.

Stuff peppers into sterilized jars. You may add a few dry hot peppers and garlic to the peppers if you so desire.

Fill jars with the syrup nearly to the top, add 1 or 2 tablespoons of olive oil,

Seal jars but not tightly. Put jars in a water bath and cook them for about 10 minutes.

Take jars out of hot water bath and seal them tightly. Stand the jars upside down till they cool. Keep jars in a cool place.
