Ingredients: |

4 chicken breasts, cut in large cubes
Marinade:
1/2 cup fresh squeezed lemon juice
1 lemon, zest of
1/2 cup white wine vinegar
1-1/2 cups olive oil
4 to 5 tbsp. chopped garlic
1/2 red onion, cut in large pieces (same size as chicken)
2 tbsp. dried or fresh oregano
Salt and pepper to taste

Directions:

Place chicken in marinade overnight stirring it a few times (make sure the chicken is covered.)
Preheat BBQ. Slide a piece of chicken on the skewer, followed by a piece of red onion. Continue alternating until the skewer is full.
Use the remainder of the marinade to baste the skewers during the cooking process. Salt and pepper again and enjoy!!
