Ingredients:

2 boxes manicotti
1 lb. 7% fat hamburger
1 lg. red onion, chopped
2 tbsp. safflower oil
4 cloves fresh garlic
1 tbsp. Italian seasoning
1 tsp. pepper
1 tsp. salt
2 pkg. (10 oz. each) frozen chopped spinach, thawed
1 qt. non-fat cottage cheese
1/2 cup Parmesan cheese
1 jar (4 lb. 3 oz.) Prego spagetti sauce with mushrooms
2 cups water
1/2 cup Parmesan Cheese for topping

Directions:

In large frying pan, brown the hamburger, onion, garlic, oil, Italian seasoning, salt and pepper (do not drain). Cool mixture for 10 minutes then add spinach, cottage cheese and parmesan cheese; mix thoroughly. Pour spagetti sauce and water in large, mix well.

Boil manicotti noodles 7 minutes only, and drain and rinse with cold water. Spray bottom of two oblong glass baking dishes with nonstick spray and apply a layer of sauce. Carefully stuff noodles with meat mixture and arrange in pans. Cover with remainder of sauce. Sprinkle top with Parmesan cheese.

Cover with aluminum foil and bake at 350°F for approximately 50 minutes, then remove foil and bake another 10 minutes. Remove from oven and let cool 15 minutes. Ready to serve.
