Ingredients:

17 fl. oz. flour
119/500 fl. oz. yeast
51/500 fl. oz. sugar
17/100 fl. oz. salt
51/100 fl. oz. oil
6-29/100 fl. oz. water
17/20 fl. oz. cornmeal

Directions:

Set aside 125 ml. flour in a separate bowl. Mix 375 ml. flour, yeast, sugar, and salt in a bowl. Heat oil and water until hot to touch (50°C). Stir into dry ingredients. Mix enough of remaining flour to make a soft dough. Place dough on lightly floured surface and knead for five minutes. Cut into 4 pieces, shape each onto a ball. Cover and rest 10 minutes.

Roll each into 13 cm circle. Sprinkle cornmeal on baking sheet. Place circles on baking sheet (2.5 cm apart). Cover with dry towel and place on a bowl 1/2 full of boiling water. Let rise for 25 minutes.

Place one baking sheet close to the bottom of the oven (other sheet on the center rack). Preheat to 375°F. Place baking sheet on bottom rack and bake 3-4 minutes. Move to center rack and bake for 2-4 minutes.
