24-1/2 oz. assorted mushrooms
2 onions
4 tsp. oil
8-3/4 oz. goat cheese
Red wine vinegar
Puff pastry
Basil, for garnish
Egg Wash:
1 egg whisked lightly with
1 tbsp. milk

Directions:

Heat red wine vinegar in pot; add onions and reduce until caramelized.
Spray flat tray with cooking oil and place one sheet of puff pastry, Score a line roughly 2 cm. along the inside of pastry sheet. Cook in moderate oven (350°F) for 10 minutes. Remove from oven.
Remove caremalised onions from pot and spread evenly over puff pastry, layer mushrooms over onions. Spread goat cheese over the top and cook in a moderate oven (350°F) for 20 minutes or until the goat cheese has started to slightly melt. To give the pastry a nice brown colour, brush with an egg wash lightly before placing back into oven.
Remove tart from oven, slice into sections and serve with crusty bread and salad. We had a white wine with this, but even a nice smooth red would be perfect.
