Ingredients:

16 lg. sea scallops
1/2 cup low-sodium soy sauce
1/2 cup sugar-free maple syrup
8 slices thick-cut bacon

Directions:

Rinse scallops and dry with paper towels. Combine soy sauce and syrup in bowl and place scallops in soy sauce syrup mixture. Marinate for 15 minutes.

In the meantime, cut bacon in half. Once scallops have finished marinating, place one scallop on one half slice of bacon and place seam side down on a cookie sheet. Repeat with remaining scallops. Bake in 350°F oven for about 20-25 minutes or until Bacon is crisp and Scallops are cooked through. Makes 4 4-Scallop Servings.
