1 cup uncooked long grain white rice
1 can condensed cream of mushroom soup
1 cup grated chedder cheese
1/4 white or yellow onion, chopped
1/2 to 1 lb. fresh broccoli (more or less depending on your taste)

Directions:

Prepare the rice according to the package directions. Preheat the oven to 350°F.
Saute the onion (I like to use spray butter so there is no calories). Steam the broccoli until it is bright green, but not completly done (about 5 minutes).
Put the can of soup in a large mixing bowl, throw in the onions, throw in the cheese... when rice is finished, add to mixture and stir until it's a big gummy ball of goopy goodness. :)
Remove broccoli from steam, and fold into the goop mixture. Put it into a casserole dish and pop it in the oven for about 20-25 minutes. Enjoy!

Great as a side, but I used it as a main course since it is so filling. You can use noodles instead of rice if you're strapped for time and it comes out just as yummy!
