3 cups flour
1-1/2 cups sugar
3/4 cup cocoa powder
3/4 tsp. salt
3 tsp. baking powder
1-1/2 cups milk
2 eggs
1-1/2 tsp. vanilla
3/4 cup shortening

Filling:
3/4 cup butter, softened
2 cups powdered sugar
1/8 tsp. salt
1 jar (7 oz.) marshmallow cream
1-1/2 tsp. vanilla
1 tbsp. milk

Directions:

Cookie:
Blend together dry ingredients and then add all wet ingredients. Blend thoroughly. Drop by rounded teaspoons onto an ungreased cookie sheet. Leave space and only use a teaspoon, they spread. Bake at 400° for 7-8 minutes. Remove immediately and cool. Makes a soft cake like cookie.

Filling:
Blend all and beat with mixer until fluffy. Spread filling on one cookie and top with another, sandwich style.

User Reviews:

I made this for a small party and everybody loved these cookies. I would recommend adding 1 pkg. (12 oz.) chocolate chips to the mixture for a double chocolate effect! Enjoy!
