Ingredients:

1 cup graham cracker crumbs
1 cup panko bread crumbs (Japanese rice bread crumbs)
2 eggs, beaten
Water
Ice cream
Oil for frying

Directions:

Combine eggs and an equal quantity of water. Combine panko and graham cracker crumbs and stir. Form ice cream into uniform balls and freeze hard. Roll ice cream balls in egg wash and then in crumbs. Repeat twice, creating a triple breading (this also helps insulate the ice cream in the fryer). Quickly return to freezer and freeze hard again.

Preheat fryer to 375°f. Drop frozen ice cream balls into fryer and fry for about 20 seconds until breading is crisp. Overcooking will cause a big mess when the ice cream melts. Serve immediately.

This recipe takes ice cream to soaring new heights of being catastrophically unhealthy, but my simple defense is it tastes sooo good.

Try using an artisanal ice cream and feel free to experiment with all different flavors. I used a honey-pistachio ice cream from Jeni's in Columbus, Ohio.
