Ingredients:

1 lb. ground beef
1 sm. onion
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
3 cups mashed potatoes
1 can cream corn
6 slices American cheese

Directions:

Preheat oven to 350°F. Brown ground beef with onion, salt, pepper and garlic powder. While browning make your mash potatoes, set aside. Drain fat from ground beef. Grease a casserole dish (9X9-inch) and spoon a cup of mash potatoes on the bottom. Spread the ground beef over mashed potatoes. Pour the can of cream corn over meat. Spoon the rest of your mashed potatoes over cream corn, then lay your 6 slices of cheese over mashed potatoes. Bake for 20 minutes and serve!

Simple and quick to make (even moreso if you've already cooked the meat and you use instant potatoes), and extremely, extremely tasty. I'm a dunce at cooking, and in my opinion, this is an absolutely fool-proof recipe that's amazingly tasty.


In 1968, while we were in the Army we called this Chinese Pie (Don't know why). In those days we were young, married and with not much money. We made it every couple of weeks. It is great, inexpensive and very easy to make.
