Ingredients:

3 cups dried pinto beans
1 clove garlic, chopped
1 sm. onion, chopped
9 cups water
1 cup fried, drained and chopped bacon
5 sm. green chiles, chopped
1 lg. tomato, chopped
1/2 cup chopped fresh cilantro
1 can (12 oz.) beer

Directions:

Cook the pinto beans in the water with the chopped garlic clove. When the beans are about half way cooked add the bacon. Take the tomato, onion the chiles and the cilantro and saute it in 1 tablespoon of cooking oil. When they are all tender add it to the cooked beans. Pour in the beer and cook for an additional 15 minutes. Serve it in side bowls it is a little on the loose side.

I made this dish to go along with a Tex-Mex cook out that we did at work years ago. And it is still a hit when I make them a home.

Einar, these were great. I made these for a group BBQ and everyone loved them. One person recommended a little molasses for a perfect combination of sweet and spicy, but I liked them just the way they were!
