Ingredients:

1 tbsp. olive oil
1 tbsp. minced shallot
1/4 cup vodka
1 can (sm.) spicy V-8 juice
2 tbsp. Worcestershire sauce
2 tbsp. red wine vinegar
1 tsp. Dijon mustard
1 tsp. sugar
1 tsp. bottled horseradish, drained
1/2 tsp. celery seed
1/2 lemon, juice of
Salt and pepper to taste
8 oz. cooked shrimp
2 cups chopped tomatoes
1 cup sliced celery
1/2 cup sliced cucumber
1/3 cup halved pimiento-stiffed olives
1/4 cup sliced red onion
3 tbsp. chopped fresh parsley
1 tbsp. olive oil

Directions:

Heat 1 tablespoon oil in a saucepan over medium-high heat. Add the shallot and saute until soft around 3 minutes. Deglaze with the vodka and simmer until almost evaporated. Add the V-8 juice, Worcestershire, vingar, mustard, sugar, horseradish, celery seed and lemon juice. Let boil for 5 minutes, then add the salt and pepper to taste. Remove from the heat and chill in the fridge.

Toss the remaining ingredients together in a bowl and season with salt and pepper. Split the salad among 6 salad plates and serve with the now chilled dressing in shot glasses with the salad on the side.
