Ingredients:

2 breasts chicken or 4 chicken thighs
1 md. tomato, chopped
2 tbsp. olive oil
2 tbsp. basil
2 tbsp. parsley
1/4 cup grated parmesan cheese
1/2 cup mozzarella cheese
1/4 cup Worcestershire sauce
1/4 tsp. hot sauce
1 can tomato paste
1 clove garlic, crushed
1 qt. baby bella mushrooms, sliced
1/2 onion, chopped
1/2 tsp. salt
1/2 tsp. pepper

Directions:

In a small pot over medium heat sauteolive oil, garlic and onion over medium heat until onion is clear. Saute chicken in oil until just starting to brown. Turn heat down to low and add tomato, tomato paste, and mushrooms; stir until combined and simmer for 1 hour. Add cheeses; simmer until mozzarella cheese melted and distributed through out, stirring occasionally. Serve with grated cheese on the side to sprinkle on top.

This recipe is a little unorthodox for chicken cacciatore, but it tastes very similar.
