1/4 cup shredded unsweetened coconut
1 tbsp. coconut extract (sugar-free)
2 cups Hood Carb Countdown dairy beverage (low carb milk)

Directions:

Whisk ingredients together until smooth and pour into dessert bowls or
into prepared nut crust (make double recipe of pudding for pie). Chill until set.
