Barbecued Chicken and Avocado Pizza

Ingredients:

1 recipe pizza dough
1 lg. chicken breast
Olive oil
4 cloves garlic, minced
3/4 tsp. crushed red pepper flakes
1/3 lb. asiago cheese, sliced
1 plum tomato, sliced
Parmiggiano-Reggiano, freshly grated
1/2 avocado, peeled, pitted and sliced
1 tbsp. chopped cilantro
Freshly cracked black pepper

Directions:

Marinate the chicken breast in olive oil, 2 cloves minced garlic and 1/2 tsp. crushed red pepper flakes overnight. Grill the chicken breast. Remove the chicken breast and slice.

Preheat oven to 450°F. Roll out pizza dough and place on pizza tray. Brush olive oil over pizza crust. Sprinkle remaining 2 cloves minced garlic and 1/4 tsp. crushed red pepper flakes over crust. Arrange the asiago cheese, then sliced chicken and tomato on the crust. Grate the Parmiggiano-Reggiano over the toppings. Place in the oven and bake for about 18 minutes, or until the cheese is lightly browned.

Remove pizza, slice and place an avocado sliver on each slice. Sprinkle the chopped cilantro and crack the black pepper over the pizza.

You can top each slice with avocado, or mix up some guacamole and place it in the middle of the pizza.
