Barbecue Spare Ribs with Chipotle Sauce

Ingredients:

2 rack spare ribs
2 bottles (12 oz. each) beer

Chipotle Sauce:
1 can (7 oz.) chipotle peppers in adobo sauce
1 onion, finely chopped
5 cloves garlic, minced
1/2 cup cider vinegar
2 oz. tomato paste
3 tbsp. brown sugar
Salt and pepper, to taste

Directions:

Marinate ribs in beer overnight.

Separate the chipotle peppers from the adobo sauce. Chop the chipotle peppers and saute with the onion and garlic, until onion and peppers are slightly charred. Process in a food processor or blender. Add all sauce ingredients to a sauce pan and simmer for 20 minutes.

Preheat the grill. Place ribs on a cutting board, sprinkle salt and freshly ground pepper over each side of ribs and rub into the meat with your hands. Place ribs on grill and baste with chipotle sauce. Flip every 10 minutes and baste with each flip.

When cooked to desired doneness, remove ribs from grill and slice directly between each rib.

Sweet, yet spicy -- but not too spicy! Marinating the ribs in beer overnight makes the meat tender and easy to gnaw on!
