4 sweet potates, peeled and quartered
1 cup pineapple juice
3/4 cup brown sugar
1 tsp. ground cinnamon
1-1/4 cups mini-marshmallows

Directions:
|
Place sweet potatoes in a square casserole dish. Mix together pineapple juice and brown sugar; pour over sweet potatoes. Sprinkle cinnamon over sweet potatoes. Bake at 375°F for 35 minutes. Remove from oven and cover with marshmallows. Place in oven until marshmallows are melted and lightly browned.
