Ingredients:

1 lb. split peas (soak overnight)
2 to 3 stalks celery, chopped
1 lg. onion, chopped
1 to 2 lg. carrots, chopped
1 bay leaf
1 lb. ham pieces
Salt and pepper, to taste
Enough water to fill to about 1-inch from top of crock pot.

Directions:

Cook in crock pot on high 5-6 hours, or low 10-12 hours.

Adding a large potato or two small ones cubed the last 25 minutes works. I would cut down a little on the celery. "Not necesscelery?"


Besides the ham pieces,I add a smoked ham hock to my peasoup. The ham hock really adds the flavor.

Also, I put in 3 cups of chopped leeks instead of onion. I add a diced potato and 2 diced garlic gloves as well.

If you really like a lot of meat (most men do!), add some sliced (bite size) smoked sausage (tender skin) to your soup during the last hour.

Soaking peas overnight is not necessary.

Note: For one pound of peas, you need 10 cups of water for soup.
