Chicken, Lettuce, Tomato Sandwich with Garlic Aioli

Ingredients:

4 boneless skinless chicken breasts
8 slices bacon (preferably maple flavored)
8 slices Texas toast
4 slices sharp Cheddar
1 cup mayonnaise
1/4 cup minced garlic
2 tbsp. Old Bay seasoning
Leaf lettuce
Roma tomatoes

Directions:

Mix together the mayonnaise, garlic and Old Bay in a bowl cover and chill until ready to use. Cook up bacon in frying pan and place on paper towel plate for later use.

Cook chicken breasts in frying pan that had bacon grease left in it. Cook until golden brown and delicious. Set in a 200°F oven to melt cheddar cheese on top of the chicken breasts.

Slice up the lettuce and roma tomatoes. Toast the Texas toast. Assemble as follows, from the bottom up:
Texas toast
Garlic mayonnaise
Chicken breast with cheddar melted
Bacon
Leaf Lettuce
Roma tomatoes
Texas toast with garlic mayonnaise

Sit and enjoy.
