6 lb. hamburger
3/4 green bell pepper, diced
3/8 yellow onion, diced
1-1/4 red bell pepper, diced
4 eggs
1-1/4 cups ketchup
1/4 cup Worcestershire sauce
3/4 tbsp. basil
3/4 tbsp. garlic powder
3/4 tbsp. parsley
3/4 tbsp. thyme
3/8 tbsp. rosemary, crushed
3/8 tbsp. old Bay Seafood seasoning
3/8 tsp. kosher salt
1/8 cup bread crumbs

Directions:

Mix all ingredients together well, and place in 2 sprayed hotel pans. Cook in 350°F oven for 1-2 hours until thermometer reads 140°F. Remove from oven and let cool completely before cutting and wrapping. DO NOT OVER BAKE!!!!
The key to the meatloaf being moist and tender is that it's undercooked initially, but then when reheated in the microwave it is then cooked fully.

It took me for ever to make this for foodservice, because I hate dried out meat loaf. I can make it fresh and make one frozen and you cannot tell the difference. All you have to do is cook it longer, because the recipe as follows is to be frozen and then finished in a microwave.
