Ingredients:

3 to 4 cups steamed white long grain rice
1 lg. onion, finely chopped
6 slices bacon, chopped
1 green pepper, finely chopped
1 carrot, grated
1/2 cup cooked peeled shrimp (optional)
2 eggs, made into omelette and chopped
Kikoman soya sauce (brand important!)
1 tsp. chicken flavoured stock powder

Directions:

Fry onion over medium heat until transparent. Add bacon and fry until cooked. Add green pepper, carrot and shrimp. Stir fry for approximately 5 minutes. Add cooked rice and mix thoroughly to distribute the vegetables into rice. Add chicken stock powder and soya sauce (maximum 50 ml.) until desired flavour achieved. Make omelette with eggs, chop roughly and place on top of rice to serve.

This is my Asian mother's recipe. Every time I go to a barbeque I am asked to bring it along. Rice needs to be steamed, not boiled and preferably made several hours before hand to avoid stickiness.
