Ingredients:

1 lb. boneless, skinless chicken breast, cut into 1-1/2-inch cubes
1/4 cup fresh lemon juice
3 tbsp. olive oil
1 piece (2-inch) fresh ginger, peeled and grated
1 clove garlic, minced
1/2 tsp. black pepper
1/4 tsp. salt
Wooden skewers, soaked in water

Directions:

Mix the salt, pepper, garlic, ginger, olive oil and lemon juice in a medium bowl. Put the cubed chicken in the lemon mixture and toss to blend. Cover with plastic wrap and chill for one hour to let the flavors blend.

Set oven to broil. Thread the chicken onto wooden skewers. Toss out the remaining marinade. Cook the kabobs for about 11-13 minutes on each side or until the chicken is lightly brown and fully cooked. Serve hot or warm.

It only has 7 ingredients. Try it with some homemade fried rice.

Don't forget to soak the wooden skwers in water for 30 minutes!
