Ingredients:

2 eggs
1 tbsp. butter or margarine
1 sm. onion, chopped
1 slice American cheese, sliced in small pieces
2 slices ham, sliced in small pieces
1 to 2 dash green curry powder, to taste

Directions:

Break and scramble eggs in a side dish. Put butter/margarine in a pan over a high flame and heat until melted. Add eggs; let settle over entire pan. In about 30 seconds and add onion, cheese and ham. Add a dash or two of curry powder. When fully cooked, fold over (omelette style) and serve hot.

Comments from ebendi01 :

If you use really good curry powder and eat this food on white plates you can get really cool neon green streaks on the plate (from the curry).

Optional - serve with layer biscuts for a little extra yum.

Store leftovers in refrigerator in tupperware.
