Ingredients:

1 (2 to 3 lb.) chicken, cut up
2 tsp. finely chopped garlic
1 cup dry white wine
1/2 cup fresh chopped parsley
1/2 cup chopped red bell pepper
2 cups chopped onion
2 tbsp. oil
Cayenne pepper, to taste
2 tbsp. soy sauce
Salt, to taste

Directions:

Rince the chicken and pat it dry. Season it with the soy sauce, cayenne pepper and salt. Set it aside to let the flavors blend for a few minutes.

In a large pan heat the oil and saute the onions and the peppers and parsley for a few minutes. Add the wine and the garlic; stir well, then add the chicken parts. Mix well over medium heat and cook slowly for about 2 hours stirring occasionally (do not cover). Add some more wine or water if needed.

Serve over cooked white rice.
