Ingredients:

1 tbsp. butter
1 tbsp. oil
2 cups crushed corn flakes, divided
2 cups flaked poached salmon
2 tbsp. fresh parsley, minced
3 tbsp. mayonnaise
3 tsp. Dijon mustard
1 tsp. hot pepper sauce
1 tbsp. lemon juice
1 egg
1/2 tsp. paprika
Salt and pepper to taste

Spicy Mayonnaise:
1 cup mayonnaise
3 tbsp. hot sauce
1 tbsp. lemon juice
Salt and pepper to taste

Directions:

Combine 3/4 crumbs and the rest of the ingredients. Form mixture into 6 or 8 patties, adding more crumbs if needed to thicken. Dip salmon cakes into remaining crumbs to coat. Melt butter and oil together in a medium saucepan. Cook cakes until golden brown, about 4-6 minutes on each side. Serve over salad green with spicy mayonnaise.

I combined 3 different recipes and added some things to adjust its unique flavor. You can crush corn flakes yourself or you can also buy premade cornflakes crumbs by Kellog's. You can find it where you usually buy breadcrumbs at the supermarket. This recipe is great for last minute appetizers, I'm sure you could substitute freah poached salmon for convenience.
