Ingredients:

1/2 cup Uncle Ben's 30 minute Brown Rice
1 can Amy's organic cream of mushroom soup (or your favorite brand)
1 can pinto beans, drained slightly
Black pepper, to taste

Directions:

Prepare rice according to package instructions. After rice has absorbed the water, add remaining ingredients and simmer until warm (about 5 extra
minutes). If you like the Louisiana heat of red beans and rice, use freshly ground peppercorns.

What makes this recipe good is really the cream of mushroom soup. Though my husband hates mushrooms, he didn't have a clue that there were any in his red beans and rice because of how tasty it was. I used Amy's organic cream of mushroom soup, which can be found in the health food section of your grocery store. (But any brand will do.)

Seriously, this recipe evolved one night out of a lack of ingredients around the apartment, but we love it. A great deal of the appeal of this recipe is in how easy it is to prepare. Throw in rice, soup, pepper, and beans. No chopping or measuring. Easy enough for even a Georgia Tech student to prepare.
