Ingredients:

4 slices bacon
1-1/2 lb. ground chuck
1 cup fresh bread crumbs
1 cup shredded cheddar cheese
1/2 cup chopped onion
2 tbsp. mayonnaise
2 tbsp. sweet pickle relish
2 tsp. dry mustard
3/4 tsp. salt
1/2 tsp. black pepper
1 whole egg
1/4 cup ketchup

Directions:

Heat oven to 350°F. In a medium pan cook the bacon over medium heat until just limp, about 3-4 minutes. Remove the bacon and save it.

In a large bowl, combine the ground beef, bread crumbs, 1/2 cup cheese, onion, mayonnaise, relish, mustard, salt, pepper and egg; mix well. Pat the mixture into a shallow 2-quart baking dish. Spread the top with the ketchup then lay the bacon over the top of the loaf.

Bake until the top is firm and the bacon is crisp 45-50 minutes. Then spread the rest of the cheese during the last 5 to 10 minutes of the baking.

Remove from the oven and let the loaf rest in dish for 10 minutes. Then cut into slices and serve.

I make this at work alot. People ask for it when I do our best of Meat Loaf month. I like to serve it with french fries with gravy.

I made this just last night for dinner. We all talked about it at the table. It was very good. But how much onion goes in it? You did not have onions in the ingredients list. So I put in 1/2 a cup chopped.
