1 box silken light firm tofu (I use Mori-Nu)
2 tsp. vanilla extract
1/4 tsp. nutmeg (fresh is better)
1/4 tsp. cinnamon
1 pinch salt
2 tbsp. oil
2 to 3 cups soy milk
1 loaf any artisan bread, seedless (try to get one without cornmeal on the bottom)

Directions:

Place all ingredients except for bread into a blender and puree until smooth, adding more soymilk as needed to form a thin batter.
Slice the bread into 1-inch slices and toast lightly on both sides. I use the broiler to get them all done at once. (If you use your broiler, don't walk away from it. This method tends to go from pale to burnt in record time.)
Pour the blender contents into a shallow bowl. Dip the toasted bread pieces in the mixture, allowing the liquid to soak in for about 30 seconds.
Cook on oiled griddle, turning when lightly browned, 1-2 minutes each side.

Who needs eggs?
Top with powdered sugar and/or maple syrup.
These freeze very well. Freeze flat on a cookie sheet, then move to a ziploc bag. Microwave 2 pieces for up to 1 minute on high.
