Ingredients:

1 tbsp. dry vermouth
1 fresh lime, juiced
1 fresh orange, juiced
1 jalapeno pepper, seeded and finely chopped
1 clove garlic, finely chopped
3/4 tsp. fresh thyme
1/8 tsp. allspice
4 (1/4 lb. each) boneless trout fillets (we try to use rainbow trout)
1 tbsp. butter, cut into small cubes

Directions:

Combine the first 7 ingredients in a bowl to make the marinade. Put the fillets in a ovenproof dish and pour the marinade over and let marinate for 15 minutes.

Preheat the broiler. Take the trout out of the marinade. Strain and save the marinade. Broil the fillets about 3 inches from the heat for 10-12 minutes, basting with the marinade,until opaque in color. Place butter cubes on top and broil for a few seconds until butter is melted.

Serve with wild rice and white wine.
