Ingredients:

2 tbsp. extra virgin olive oil
1 tbsp. lemon juice
1/2 clove garlic, minced
1/4 tsp. sea salt
pinches freshly ground black pepper
8 leaves romaine (Cos) lettuce
2 tomatoes, cut into wedges
1/4 sm. red onion, thinly sliced
8 cucumber, cut in half
1/4 slice green pepper (capsicum), julienned
2 oz. feta cheese, cut into small cubes
12 kalamata olives

Directions:

Mix together the olive oil, lemon juice, garlic, salt and pepper in a small bowl. Place the salad ingredients in a large bowl. Pour the dressing over the salad and toss gently to combine just before serving.

Greek salad or horiatiki is a rough country salad of crisp lettuce, cucumber, red onion, green pepper, juicy tomatoes, feta cheese and plump kalamata olives. Serve this delightful combination as a side dish or as a light meal with some crusty bread drizzled with or dipped in a little extra virgin olive oil.
