1/2 lb. Chestnut mushrooms
1 lb. fillet steak, sliced in strips
1-7/10 fl. oz. brandy
1 tbsp. Dijon mustard
1 lg. onion
8-1/2 fl. oz. double cream (heavy cream)
1 handful parsley
Lots of freshly cracked black pepper

Directions:

Saute off the sliced mushrooms and onions until tender in a skillet with a little butter. Add the Dijon mustard, brandy (if you have a gas flame, flambe the brandy) and strips of steak. Almost immediately add the cream and bring to a simmer. Add the chopped parsley and take off the heat. Serve immediately as the steak will still be tender and medium rare.

Simple easy stroganoff recipe.
For preference I serve this with saffron rice (the classic accompaniment). I have also experimented with adding madeira & this works fairly well, as does adding paprika. Another good addition is dried wild mushrooms and their soaking liquor (especially if you've soaked them in madeira).
