Ingredients:

17 fl. oz. homemade chicken stock (the most important ingredient)
4 oz. raw beef (sirloin or fillet), cut in very thin strips
3-1/2 oz. rice noodles
1 handful coriander (cilantro)
2 cloves garlic, chopped
1 piece (thumbsize) ginger, chopped
2 chillis, chopped
3 shallots, chopped
2 tbsp. nam pla
1 stalk lemon grass, chopped
1 tbsp. sake
1 tbsp. lime juice

Directions:

Quickly boil the noodles in boiling salted water; drain and add a small heap to a bowl. Place meat strips on top. Sweat off the aromatic vegetables in a separate pan for 2 minutes; add the chicken stock. Allow to simmer for 5 minutes. Add sake, nam pla, lime juice and season to taste. Add a lot of chopped fresh coriander and pour gently over the noodles and meat. The heat in the stock will instantly cook the beef. Serve with a little more chopped coriander.
