Ingredients:

1 leg of lamb
1 bottle red wine
1/2 lb. unsalted butter
2 to 3 sprigs fresh thyme
Seasoning, to taste

Directions:

Marinate the leg of lamb overnight in the bottle of red wine. Just before work make a bag large enough to accommodate a leg of lamb with aluminium foil. Place the leg of lamb, the red wine, butter and several sprigs of fresh thyme in the bag. Seal the bag and place in a oven and bake at 250°F/120°C for 8 hours (or more).

As this is a rich dish, serve with some relatively plain vegetable side dish and simple mashed potatoes (thyme-mashed potatoes goes well with this). When cooked the meat will fall off the bone as it is so tender.

To create your sauce just remove the red wine-butter mixture from the foil and reduce to 1/4 of its size to form a thick jus.
