Ingredients:

14 oz. snapper
3-1/2 oz. minced pork or chicken
21/40 oz. coriander
21/40 oz. garlic, chopped
7/40 oz. pepper
3-1/2 oz. onion, chopped
2 eggs, beat together
1-1/20 oz. fish sauce
7/40 oz. sugar
3-1/2 oz. chilli sauce
21/100 oz. crab shells

Directions:

Grind coriander, garlic and pepper together. Mix pork (or chicken) with the ground ingredients. Stir in snapper, onion, fish sauce and sugar. Mix well. Fill the crab shells with the mixture and steam for 15 minutes. Let cool.

Dip the steamed snapper in beaten eggs. Deep-fry in oil over a medium heat until golden brown. Arrange on a plate with a side dish of chilli sauce.
