Ingredients:

1 lb. very small new potatoes, washed
3/4 cup dark brown sugar, packed
1/2 stick butter
Salt and pepper, to taste
Fresh chopped parsley (for garnish)

Directions:

In a medium pot boil the potatoes until almost fork tender about 7-8 minutes. Pour off the water and let cool enough to handle. Then peel the potatoes and set aside.

In a medium to large pan, melt the butter over medium low heat. Add the dark brown sugar; stir and let heat through. Raise the heat a little (you are trying to almost make caramel). When slightly thick add the cooked new potatoes. Stir and cover the potatoes with the caramel sauce. Salt and pepper to taste and garnish with the chopped parsley.
